Survival Sourdough Starter

Hey, long time no see! How have you been? Look at you, you haven't aged a single day since I last saw you. Me? Oh, I've been well, thanks for asking! I've been around, I just didn't have much new to say lately.

Recently I posted on Facebook about how easy it is to make sourdough starter. The response to it surprised me. A lot of people didn't know what a simple thing it is to do. Others knew but hadn't had one in quite a while. To me it only made sense to get one going as it became more and more apparent that COVID-19 was going to cause us all to need to be quarantined. Soon after the post people started posting pictures of their bread and tagging me.

This got me thinking that people are going to need some help, inspiration, and motivation to get through these difficult times.

So, without further ado, here is how to make a sourdough starter:

1 cup of water
1 cup of flour
Mix well

I don't know about you, but after all that I think that I need a drink. We just started a starter! How fucking cool is that?

For the next 5 to 10 days the starter will need to be fed. This involves discarding half the starter and mixing in 1/4 cup of water and 1/4 cup of flour to the remainder. When it's ready to use it'll have a pleasant sour smell and be bubbling and risen a couple of hours after being fed.

Once it has become a useable starter you can continue to feed it in the same manner daily, or if you don't plan to use it all that often, put it in the refrigerator and feed it once a week.

There are a lot of very good resources on the Web that can tell you ways to use both your starter and your discard. I may revisit those topics later, but this was post is really all about getting that starter going.
